  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 1 pound ground beef (or lamb)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon gluten-free Worcestershire sauce
  • 2 tablespoons tomato paste
  • 1 cup beef or chicken broth
  • 1 teaspoon fresh thyme leaves
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 4 large potatoes, peeled and diced
  • 4 tablespoons unsalted butter
  • 0.5 cup milk
  • 1 cup shredded cheddar cheese

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a large skillet, heat olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté for about 5 minutes, until the vegetables begin to soften.

Add minced garlic to the skillet and sauté for another minute.

Step 4

Increase heat to medium-high and add ground beef (or lamb) to the skillet. Cook until browned, breaking it apart with a spoon, about 8 minutes. Drain excess fat if necessary.

Season the meat mixture with salt and black pepper. Stir in gluten-free Worcestershire sauce and tomato paste, cooking for 2 more minutes.
