Ingredients

  • 2.5 cups Gluten-free flour blend
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Xanthan gum
  • 0.25 cup Olive oil
  • 0.75 cup Warm water
  • 2 tablespoons Extra-virgin olive oil
  • 1 pound Ground beef or lamb
  • 1 medium Onion, finely chopped
  • 1 medium Tomato, diced
  • 0.25 cup Parsley, chopped
  • 0.25 cup Pine nuts (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Ground cinnamon
  • 0.5 teaspoon Paprika
  • 1 large Egg, beaten (for brushing)

Directions

Step 1

In a large mixing bowl, combine the gluten-free flour blend, baking powder, salt, and xanthan gum. Mix well.

Step 2

Create a well in the center of the dry ingredients and add the olive oil and warm water. Stir until a soft dough forms.

Step 3

Knead the dough gently with lightly oiled hands until smooth. Cover with a damp cloth and let it rest for 20 minutes.

Step 4

Meanwhile, heat the 2 tablespoons of extra-virgin olive oil in a skillet over medium heat.

Step 5

Add the finely chopped onion to the skillet and sauté until soft, about 5 minutes.

Step 6

Add the ground beef or lamb to the skillet. Cook, breaking up the meat with a spoon, until browned and cooked through, about 10 minutes.

Step 7

Stir in the diced tomato, chopped parsley, optional pine nuts, salt, black pepper, ground cinnamon, and paprika. Cook for another 5 minutes, then remove from heat and let it cool slightly.

Step 8

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 9

Divide the rested dough into 12 equal pieces. Roll each piece into a ball and flatten into a small disc on a lightly floured surface.

Step 10

Place a spoonful of the meat filling in the center of each dough disc. Fold the edges up slightly to form a square or leave them open-faced, pressing the sides lightly to seal.

Step 11

Arrange the sfihas on the prepared baking sheet. Brush the edges with the beaten egg.

Step 12

Bake in the preheated oven for 20-25 minutes, or until the dough is golden brown.

Step 13

Remove from the oven and allow the sfihas to cool slightly before serving. Enjoy your gluten-free Middle Eastern meat pies!
