Ingredients

  • 8 oz Gluten-free udon noodles
  • 3 large Celery stalks
  • 2 bunches Scallions
  • 2 cloves Garlic
  • 1 inch Fresh ginger
  • 3 tablespoons Soy sauce (gluten-free)
  • 1 tablespoon Sesame oil
  • 2 tablespoons Toasted sesame seeds
  • 2 tablespoons Olive oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 1 cup Water

Directions

Step 1

Begin by preparing the gluten-free udon noodles according to the package instructions. Once cooked, drain, rinse with cold water, and set aside.

Step 2

While the noodles are cooking, prep the vegetables: thinly slice the celery on a slight diagonal and slice the scallions, separating the white parts from the green parts. Mince the garlic and finely grate the ginger.

Step 3

In a large skillet or wok, heat the olive oil over medium-high heat. Add the garlic, ginger, and the white parts of the scallions to the pan. Sauté for about 1 minute or until fragrant.

Step 4

Add the sliced celery to the skillet, and stir-fry for 2-3 minutes until the celery begins to soften but still retains some crunch.

Step 5

Pour in the water, then add the gluten-free soy sauce, sesame oil, salt, and pepper. Stir to combine and bring to a simmer.

Step 6

Add the cooked udon noodles into the skillet, using tongs to gently toss the noodles with the vegetables until well coated with the sauce and heated through, about 2 minutes.

Step 7

Sprinkle in the toasted sesame seeds and the green parts of the scallions. Toss once more to combine and adjust seasoning if needed.

Step 8

Serve immediately, garnished with additional sesame seeds and scallions if desired. Enjoy your gluten-free sesame udon with savory soy and fresh celery flavor!
