Ingredients

  • 1.5 cups Gluten-free all-purpose flour

  • 3 large Eggs
  • 0.5 cup Almond milk
  • 0.25 cup Olive oil
  • 1 medium Carrot, grated
  • 1 medium Zucchini, grated
  • 0.5 medium Red bell pepper, diced
  • 2 stalks Green onions, chopped
  • 1 cup Cheddar cheese, grated
  • 2 tablespoons Parsley, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease with oil.

Step 2

In a large mixing bowl, whisk together the gluten-free flour, baking powder, salt, and black pepper.

In another bowl, beat the eggs and then add in almond milk and olive oil. Mix well to combine.
