Ingredients

  • 1 package Gluten-free puff pastry
  • 2 cups Fresh spinach leaves
  • 1 cup Feta cheese, crumbled
  • 0.5 cup Onion, finely chopped
  • 1 tablespoon Olive oil
  • 2 cloves Garlic, minced
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 Egg, beaten
  • 1 tablespoon Sesame seeds (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large skillet over medium heat, add the olive oil. Once heated, add the chopped onion and cook for 3-4 minutes until translucent.

Step 3

Add the minced garlic to the skillet and cook for another 1-2 minutes until fragrant.

Step 4

Stir in the fresh spinach leaves and cook until they have wilted completely, about 2-3 minutes.

Step 5

Remove the skillet from the heat, allow it to cool slightly, and then mix in the crumbled feta cheese. Season with salt and black pepper.

Step 6

On a lightly floured surface, roll out the gluten-free puff pastry. Cut it into 6 equal rectangles.

Step 7

Place a heaping tablespoon of the spinach and feta mixture onto one half of each pastry rectangle.

Step 8

Fold the pastry over the filling to create a pocket and press the edges with a fork to seal them properly.

Step 9

Transfer the pastries to the prepared baking sheet. Brush the top of each pastry with the beaten egg, and sprinkle sesame seeds on top if desired.

Step 10

Bake in the preheated oven for 20-25 minutes, until the pastries are golden brown and puffed up.

Step 11

Allow the pastries to cool slightly before serving. Enjoy warm as a delicious appetizer or side dish.
