Ingredients

  • 16 oz Cremini mushrooms
  • 2 tbsp Olive oil
  • 2 tbsp Shallots, minced
  • 2 cloves Garlic, minced
  • 1 cup Gluten-free breadcrumbs
  • 0.5 cup Parmesan cheese, grated
  • 2 tbsp Fresh parsley, chopped
  • 1 tsp Dried thyme
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 large Egg

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Clean the mushrooms with a damp paper towel and remove the stems, setting the caps aside. Finely chop the stems.

Step 3

In a medium skillet, heat 1 tablespoon olive oil over medium heat. Add the minced shallots and garlic, sautéing until they become fragrant, about 2 minutes.

Step 4

Add the chopped mushroom stems to the skillet, cooking until they are soft and golden, approximately 5 minutes.

Step 5

Transfer the mushroom stem mixture to a large bowl and add gluten-free breadcrumbs, grated Parmesan cheese, chopped parsley, dried thyme, salt, and black pepper. Stir to combine.

Step 6

Beat the egg in a small bowl, then add it to the breadcrumb mixture, stirring until everything is well combined.

Brush the remaining 1 tablespoon of olive oil on a baking sheet. Place the mushroom caps on the sheet, cavity side up.
