Ingredients

  • 3 cups gluten-free all-purpose flour
  • 1 teaspoon xanthan gum
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 tablespoons granulated sugar
  • 2 teaspoons instant yeast
  • 1.5 cups warm milk (or plant-based milk)
  • 4 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 pound ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, grated
  • 2 tablespoons soy sauce (gluten-free)
  • 0.5 teaspoon pepper
  • 1 large egg yolk (for egg wash)
  • 1 tablespoon water (for egg wash)

Directions

Step 1

In a large bowl, combine the gluten-free all-purpose flour, xanthan gum, baking powder, salt, sugar, and instant yeast.

Step 2

In a separate bowl, whisk together the warm milk, melted butter, and egg. Pour the wet ingredients into the dry ingredients and mix until a soft dough forms.

Step 3

Knead the dough lightly in the bowl until smooth, then cover with a damp cloth and allow to rise for 1 hour in a warm place or until doubled in size.

Step 4

While the dough is rising, prepare the filling. In a skillet over medium heat, cook the ground beef until browned and cooked through, about 5-7 minutes.

Step 5

Add the chopped onion and minced garlic to the beef and sauté until the onion is translucent, about 3 minutes. Then add the grated carrot, gluten-free soy sauce, and pepper. Mix well and cook for another 2 minutes. Remove from heat and let cool.

Step 6

Once the dough has risen, preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 7

Punch down the dough and divide it into 12 equal parts. Roll each part into a ball, then flatten it into a circle about 4 inches in diameter.

Step 8

Place about 2 tablespoons of the meat filling in the center of each dough circle. Carefully fold the edges up and over the filling, pinching to seal and form a bun shape.

Step 9

Place each bun seam-side down on the prepared baking sheet. Cover with a cloth and let rise for an additional 15 minutes.

Step 10

In a small bowl, whisk together the egg yolk and water for the egg wash. Brush each bun with the egg wash to ensure a golden-brown finish.

Step 11

Bake in the preheated oven for 20-25 minutes, or until the buns are golden brown and firm to the touch.

Step 12

Remove from the oven and let cool slightly on a wire rack before serving. Enjoy your Gluten-Free Savory Meat Buns warm!
