Ingredients

  • 250 grams Gluten-free all-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 1 teaspoon Xanthan gum
  • 85 grams Unsalted butter, cold and cubed
  • 150 grams Sharp cheddar cheese, shredded
  • 2 tablespoons Fresh chives, chopped
  • 1 tablespoon Fresh thyme leaves
  • 180 ml Buttermilk
  • 1 large Egg
  • 0 Extra flour for dusting

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the gluten-free flour, baking powder, salt, pepper, and xanthan gum.

Step 3

Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, incorporate the butter into the flour until the mixture resembles coarse crumbs.

Step 4

Stir in the shredded cheddar cheese, chopped chives, and thyme leaves.

Step 5

In a separate bowl, whisk together the buttermilk and egg.

Step 6

Pour the buttermilk mixture into the dry ingredients. Stir until the dough just comes together. It should be slightly sticky.

Step 7

Lightly flour a clean work surface and turn the dough out onto it. Gently knead the dough a few times to bring it together well.

Step 8

Shape the dough into a round disk, roughly 1 inch thick. Cut the disk into 8 equal wedges.

Step 9

Transfer the scones onto the prepared baking sheet, spacing them out evenly.

Step 10

Brush the tops of the scones with a little extra buttermilk.

Step 11

Bake in the preheated oven for 18-20 minutes, or until the scones are golden brown and firm to the touch.

Step 12

Allow the scones to cool on a wire rack for a few minutes before serving. Enjoy them warm or at room temperature.
