Preheat your oven to 180°C (350°F).
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
Add minced garlic to the skillet and cook for 1 minute until fragrant.
Add fresh spinach to the skillet, stirring until wilted. Season with a pinch of salt and pepper, then remove from heat and let cool slightly.
In a large mixing bowl, combine ground beef, gluten-free breadcrumbs, egg, salt, black pepper, and nutmeg. Mix well to combine.
Line the bottom of a baking sheet with parchment paper. Pat out the beef mixture onto the sheet into a rectangular shape about 1 cm thick.

Starting from one of the shorter edges, carefully roll the beef tightly into a log, using the parchment paper to assist if needed. Seal the seam and tuck the ends under.
Transfer the beef roll to the center of the baking sheet. Brush with the remaining olive oil.
Bake in the preheated oven for approximately 40-45 minutes, or until the beef is fully cooked and the cheese is bubbly and golden.
Remove from the oven and let it rest for 5 minutes before slicing.
