  • 1 pound gluten-free breakfast sausage
  • 1 medium onion, chopped
  • 1 medium red bell pepper, chopped
  • 2 cloves garlic, minced
  • 3 cups shredded hash browns
  • 10 large eggs
  • 1 cup milk
  • 2 cups sharp cheddar cheese, shredded
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.

Step 2

In a large skillet over medium heat, cook the gluten-free breakfast sausage until browned and cooked through, about 8-10 minutes. Remove from the skillet and set aside.

In the same skillet, add the chopped onion and red bell pepper. Sauté until the vegetables are soft and the onion is translucent, about 5 minutes. Add the minced garlic and cook for an additional minute. Remove from heat.
