Ingredients

  • 1 pound beef sirloin
  • 1 cup coconut milk

  • 2 tablespoons lime juice
  • 3 cloves garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon curry powder
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon salt
  • 0.25 cup fresh cilantro leaves, chopped
  • 12 skewers wooden skewers

Directions

Step 1

Soak the wooden skewers in water for at least 30 minutes to prevent them from burning during grilling.

Step 2

Slice the beef sirloin into thin strips about 1/4 inch thick and 2 inches long.

In a large mixing bowl, combine coconut milk, peanut butter, gluten-free soy sauce, brown sugar, lime juice, minced garlic, grated ginger, curry powder, cayenne pepper, and salt. Whisk until smooth and well mixed to form the marinade.
