Ingredients

  • 500 grams Ground beef
  • 500 grams Ground pork
  • 250 grams Ground lamb
  • 5 Garlic cloves, minced
  • 1 teaspoon Baking soda
  • 200 milliliters Cold water
  • 2 teaspoons Ground black pepper
  • 2 teaspoons Paprika
  • 1 teaspoon Thyme
  • 1 teaspoon Coriander
  • 1 teaspoon Ground cumin
  • 2 teaspoons Salt
  • 2 tablespoons Gluten-free Worcestershire sauce

Directions

Step 1

In a large bowl, combine the ground beef, pork, and lamb. Mix well to combine the meats evenly.

Step 2

Add the minced garlic, baking soda, cold water, black pepper, paprika, thyme, coriander, cumin, salt, and gluten-free Worcestershire sauce to the meat mixture.

Step 3

Using your hands or a large spoon, mix the ingredients thoroughly until everything is well incorporated and the spices are evenly distributed.

Step 4

Cover the bowl with plastic wrap and refrigerate the mixture for at least one hour, allowing the flavors to meld together.

Step 5

After refrigeration, remove the mixture from the fridge. Using your hands, shape the meat mixture into small sausages about 3 inches long and 1 inch thick.

Step 6

Preheat your grill to medium-high heat. Lightly oil the grates to prevent the mici from sticking.

Step 7

Place the mici on the grill, cooking each side for about 3-4 minutes, or until they have a nice char and are cooked through.

Step 8

Remove the mici from the grill and let them rest for a few minutes before serving.

Step 9

Serve the gluten-free mici hot with a side of mustard or your favorite gluten-free dipping sauce.
