Ingredients

  • 4 pounds Whole chicken
  • 2 tablespoons Olive oil
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 5 cloves Garlic cloves
  • 1 unit Lemon
  • 1 bunch Fresh thyme
  • 3 units Carrots
  • 3 units Celery sticks
  • 1 unit Onion
  • 2 cups Gluten-free chicken broth
  • 2 tablespoons Gluten-free all-purpose flour
  • 2 tablespoons Butter

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Pat the chicken dry with paper towels and place it in a roasting pan.

Step 3

Rub the chicken all over with olive oil, salt, and pepper.

Peel and lightly crush the garlic cloves, then place them inside the cavity of the chicken along with the lemon (cut into quarters) and the bunch of thyme.
