Ingredients

  • 1.5 cups Gluten-free oat bran
  • 1 cup Gluten-free all-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Salt
  • 2 Eggs
  • 0.5 cup Brown sugar
  • 0.5 cup Unsweetened applesauce
  • 0.75 cup Milk
  • 1 teaspoon Vanilla extract
  • 1 cup Raisins

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well with butter or non-stick spray.

Step 2

In a large bowl, whisk together the gluten-free oat bran, gluten-free all-purpose flour, baking powder, baking soda, cinnamon, and salt.

Step 3

In another bowl, beat the eggs lightly. Add brown sugar, then the unsweetened applesauce, milk, and vanilla extract. Mix well until everything is combined.

Step 4

Create a well in the center of the dry ingredients and pour the wet mixture into it. Stir gently until just combined. Do not overmix, as this could result in dense muffins.

Step 5

Fold in the raisins, ensuring they are evenly distributed throughout the batter.

Step 6

Divide the batter evenly among the prepared muffin cups. Fill each cup approximately three-quarters full to allow room for the muffins to rise.

Step 7

Bake in the preheated oven for about 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove from oven and let muffins cool in the pan for about 5 minutes. Then transfer to a wire rack to cool completely.

Step 9

Enjoy warm or store in an airtight container for up to 3 days. These muffins can also be frozen for longer storage.
