Ingredients

  • 1 pound Chicken breast
  • 3 tablespoons Tamari sauce (gluten-free soy sauce)
  • 2 tablespoons Olive oil
  • 3 cloves Garlic
  • 1 tablespoon Ginger
  • 1 Red bell pepper
  • 2 cups Broccoli florets
  • 2 Carrots
  • 3 stalks Green onions
  • 1 tablespoon Cornstarch
  • 1 cup Water
  • 1 teaspoon Sesame oil
  • 1 tablespoon Sesame seeds

Directions

Step 1

Cut the chicken breast into thin strips and set aside.

Step 2

Mince the garlic and ginger. Slice the red bell pepper, chop the broccoli florets into bite-sized pieces, and julienne the carrots. Cut the green onions into 1-inch pieces.

Step 3

In a small bowl, whisk together the tamari sauce, cornstarch, and water until smooth.

Step 4

Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the chicken strips and stir-fry until they are golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Step 5

Add the remaining 1 tablespoon of olive oil to the skillet. Add the minced garlic and ginger and stir-fry for 30 seconds until fragrant.

Step 6

Add the broccoli, carrots, and red bell pepper to the skillet. Stir-fry for about 4-5 minutes, or until the vegetables are just tender.

Step 7

Return the cooked chicken to the skillet. Pour the tamari sauce mixture over everything, stirring well to evenly coat the chicken and vegetables.

Step 8

Continue cooking for another 1-2 minutes, until the sauce has thickened slightly.

Step 9

Stir in the green onions and sesame oil, and heat everything through.

Step 10

Transfer the stir-fry to a serving dish and sprinkle with sesame seeds before serving.
