Ingredients

  • 1 pre-made Gluten-free pie crust
  • 2 large Leeks
  • 2 tablespoons Olive oil
  • 4 large Eggs
  • 1 cup Heavy cream
  • 0.5 cup Milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Nutmeg
  • 1 cup Gruyere cheese, shredded

Directions

Step 1

Preheat your oven to 375°F (190°C). Place the gluten-free pie crust in a 9-inch pie dish and set aside.

Step 2

Trim the roots, dark green leaves, and outer layer from the leeks. Slice the leeks into thin rings and soak them in a bowl of cold water to remove any dirt and sand. Drain and pat them dry with a towel.

Step 3

Heat olive oil in a large skillet over medium heat. Add the sliced leeks and cook, stirring occasionally, until they are soft and translucent, about 10 minutes. Remove from heat and let cool slightly.

Step 4

In a medium mixing bowl, whisk together the eggs, heavy cream, milk, salt, black pepper, and nutmeg until well combined.

Step 5

Spread the cooked leeks evenly in the prepared pie crust. Sprinkle the shredded Gruyere cheese over the leeks.

Step 6

Pour the egg and cream mixture over the leeks and cheese, ensuring the filling is distributed evenly.

Step 7

Carefully transfer the quiche to the preheated oven and bake for 35-40 minutes, or until the filling is set and the top is golden brown.

Step 8

Remove the quiche from the oven and let it cool for at least 10 minutes before slicing. Serve warm or at room temperature.
