Ingredients

  • 2.5 cups Gluten-free all-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground ginger
  • 0.25 teaspoon Ground nutmeg
  • 0.5 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 1 teaspoon Pure vanilla extract
  • 0.5 cup Pumpkin puree
  • 1 large Egg
  • 0.5 cup Powdered sugar, for dusting

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the gluten-free all-purpose flour, baking powder, baking soda, salt, ground cinnamon, ground ginger, and ground nutmeg. Set aside.

Step 3

In a large bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy, about 2-3 minutes.

Step 4

Beat in the vanilla extract, pumpkin puree, and egg until well combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.

Step 6

Scoop about 1 tablespoon of the cookie dough and roll it into a ball. Place it onto the prepared baking sheet. Continue with the rest of the dough, spacing each ball about 2 inches apart.

Step 7

Flatten each dough ball lightly using your fingers or the bottom of a glass.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are slightly golden.

Step 9

Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Once cooled, dust the cookies lightly with powdered sugar before serving.
