Ingredients

  • 1 cup Gluten-free all-purpose flour blend
  • 1 tablespoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 teaspoon Ground cinnamon
  • 1 cup Premier Protein shake (vanilla flavor or your choice)
  • 1 large Egg
  • 2 tablespoons Unsalted butter, melted
  • 1 teaspoon Vanilla extract
  • 0 Honey or maple syrup (optional, for serving)
  • 0 Fresh fruits or berries (optional, for serving)

Directions

Step 1

In a large bowl, whisk together the gluten-free all-purpose flour blend, baking powder, salt, and ground cinnamon.

Step 2

In a separate medium bowl, mix the Premier Protein shake, large egg, melted butter, and vanilla extract until well combined.

Step 3

Pour the wet ingredients into the dry ingredients and stir gently until you have a smooth batter. Avoid over-mixing to keep the pancakes fluffy.

Step 4

Heat a non-stick skillet or griddle over medium heat. You can test if it's ready by sprinkling a few drops of water on the surface; it should sizzle.

Step 5

Lightly grease the skillet with a bit of butter or cooking spray. Pour 1/4 cup of batter onto the skillet for each pancake.

Step 6

Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip the pancakes and cook the other side until golden brown, about another 1-2 minutes.

Step 7

Continue cooking the rest of the batter, greasing the skillet as needed.

Step 8

Serve the pancakes warm with a drizzle of honey or maple syrup and top with fresh fruits or berries, if desired.
