Ingredients

  • 500 grams large prawns, peeled and deveined
  • 4 tablespoons gluten-free soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon ginger, freshly grated
  • 3 cloves garlic, minced
  • 1 large red bell pepper, sliced
  • 200 grams broccoli florets
  • 1 large carrot, julienned
  • 3 stalks spring onions, sliced
  • 100 grams water chestnuts, sliced
  • 2 tablespoons vegetable oil

Directions

Step 1

In a small bowl, combine the gluten-free soy sauce, oyster sauce, and sesame oil. Stir well and set aside.

Step 2

Heat 1 tablespoon of vegetable oil in a large wok or frying pan over medium-high heat.

Step 3

Add the grated ginger and minced garlic to the pan and stir-fry for about 30 seconds until fragrant.

Step 4

Increase the heat to high and add the prawns to the pan. Stir-fry for 2-3 minutes until the prawns are just cooked through and pink. Remove the prawns from the pan and set aside.

Step 5

In the same pan, add the remaining 1 tablespoon of vegetable oil. Add the sliced red bell pepper, broccoli florets, and julienned carrot.

Step 6

Stir-fry the vegetables for 3-4 minutes until they are tender-crisp.

Step 7

Return the prawns to the pan and add the sliced spring onions and water chestnuts. Stir to combine well with the vegetables.

Pour the sauce mixture over the prawns and vegetables. Toss everything together to coat evenly. Continue to stir-fry for another 2 minutes until everything is well combined and heated through.

Step 9
