Ingredients

  • 1 pound Pork tenderloin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 8 ounces Cremini mushrooms
  • 2 cloves Garlic cloves
  • 0.5 cup Gluten-free chicken broth
  • 0.5 cup Heavy cream
  • 1 tablespoon Gluten-free cornstarch
  • 1 teaspoon Fresh thyme leaves
  • 2 tablespoons Chopped parsley

Directions

Step 1

Slice the pork tenderloin into 1-inch thick medallions and season both sides with salt and pepper.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Add the pork medallions and cook for 3-4 minutes on each side until golden brown and cooked through. Remove the medallions from the skillet and set aside.

Reduce the heat to medium and add the butter to the same skillet. Once melted, add the sliced mushrooms and cook for about 5 minutes until softened and browned.
