Ingredients

  • 500 grams Russet potatoes
  • 200 grams Ground chicken (optional)
  • 2 whole Shallots, finely chopped
  • 3 whole Garlic cloves, minced
  • 2 stalks Scallions, finely sliced
  • 1 whole Egg
  • 50 grams Rice flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground white pepper
  • 0.25 teaspoon Ground nutmeg
  • 500 milliliters Cooking oil for frying

Directions

Step 1

Peel and chop the russet potatoes into large chunks. Place them in a pot of salted water, bring to a boil, and cook until tender, approximately 10-15 minutes.

Step 2

Drain the potatoes and let them cool slightly. Once cool enough to handle, mash the potatoes until smooth.

Step 3

In a bowl, combine the mashed potatoes with ground chicken (if using), finely chopped shallots, minced garlic, sliced scallions, rice flour, egg, salt, ground white pepper, and ground nutmeg. Mix until all ingredients are well incorporated.

Shape the mixture into patties, about 5-6 cm in diameter and 1 cm thick.

Heat the cooking oil in a frying pan over medium-high heat until hot. Test the oil by dropping a small piece of the potato mixture into it. If it sizzles and rises to the surface, the oil is ready.

Carefully slide the patties into the hot oil, a few at a time, to avoid overcrowding the pan. Fry until golden brown and crispy on each side, about 3-4 minutes per side.
