Ingredients

  • 12 ounces gluten-free penne pasta
  • 2 cups fresh basil leaves

  • 0.5 cups grated Parmesan cheese
  • 0.5 cups extra virgin olive oil
  • 1 tablespoon lemon juice
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 1 cup cherry tomatoes

Directions

Step 1

Bring a large pot of salted water to a boil. Add the gluten-free penne pasta and cook according to the package directions until al dente, usually about 7-9 minutes. Drain and set aside, reserving 1/2 cup of pasta water.

In a dry skillet over medium heat, toast the pine nuts until golden brown, about 3-4 minutes. Stir frequently to prevent burning, and then set them aside to cool.
