Ingredients

  • 12 ounces gluten-free penne pasta
  • 4 tablespoons unsalted butter
  • 1 cup heavy cream
  • 3 garlic cloves, minced
  • 1 cup Parmesan cheese, grated
  • 0.25 teaspoon nutmeg
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon olive oil

Directions

Step 1

Bring a large pot of salted water to a boil. Add the gluten-free penne pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta cooking water and then drain the pasta.

Step 2

While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to let it brown.

Step 3

Add the unsalted butter to the skillet and let it melt completely. Once melted, pour in the heavy cream, stirring until combined with the garlic and butter.

Step 4

Reduce the heat to low and slowly mix in the grated Parmesan cheese, stirring continuously until the cheese has melted and the sauce is smooth.

Step 5

Season the sauce with nutmeg, salt, and black pepper.

Step 6

Add the cooked penne to the skillet, tossing to coat the pasta thoroughly with the Alfredo sauce. If the sauce is too thick, gradually add the reserved pasta water a little at a time to achieve the desired consistency.

Step 7

Allow the pasta to warm through for 2-3 minutes over low heat, ensuring that all the pasta is evenly coated with the sauce.

Step 8

Remove from heat and garnish with chopped fresh parsley.

Step 9

Serve immediately with extra grated Parmesan cheese on the side, if desired.
