Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons peanut butter (or your choice of oil)
  • 1 cup pecans, finely chopped
  • 1 cup gluten-free breadcrumbs
  • 0.25 cup parmesan cheese, finely grated
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 2 eggs

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Place the chicken breasts between two pieces of plastic wrap and pound them to an even thickness, about 1/2 inch, using the flat side of a meat mallet.

Step 3

In a shallow dish, whisk the 2 eggs until well beaten.

Step 4

In another shallow dish, combine the chopped pecans, gluten-free breadcrumbs, parmesan cheese, salt, black pepper, and garlic powder.

Step 5

Brush a thin layer of peanut butter or oil on both sides of each chicken breast to help the crumbs adhere.

Step 6

Dip each chicken breast into the egg mixture, ensuring it's fully coated.

Step 7

Press the egg-coated chicken into the pecan mixture, firmly pressing to ensure an even coating. Flip and repeat on the other side.

Step 8

Place the pecan-crusted chicken breasts onto the prepared baking sheet.

Step 9

Bake in the preheated oven for 20 to 25 minutes, or until the chicken is cooked through and the crust is golden brown and crispy.

Step 10

Remove from the oven and let rest for 5 minutes before serving.

Step 11

Serve the chicken breasts warm with your favorite sides.
