Ingredients

  • 300 grams Gluten-free all-purpose flour
  • 1 teaspoon Xanthan gum
  • 0.5 teaspoon Salt
  • 1 teaspoon Baking powder
  • 50 grams Unsalted butter
  • 120 milliliters Hot water
  • 1 Egg
  • 2 tablespoons Milk
  • 250 grams Ground beef
  • 1 small Onion, finely chopped
  • 2 Garlic cloves, minced
  • 2 tablespoons Olive oil
  • 50 grams Green olives, chopped
  • 0 to taste Salt and pepper
  • 500 milliliters Vegetable oil

Directions

Step 1

In a mixing bowl, combine the gluten-free all-purpose flour, xanthan gum, salt, and baking powder.

Step 2

Cut the unsalted butter into small cubes and add it to the flour mixture. Use your fingertips to rub the butter into the dry ingredients until the mixture resembles coarse crumbs.

Step 3

Add the hot water, egg, and milk into the mixture. Stir with a fork until the dough starts to come together. Knead gently to form a smooth dough.

Step 4

Wrap the dough in cling film and chill in the refrigerator for at least 30 minutes.

Step 5

Meanwhile, prepare the filling by heating olive oil in a pan over medium heat. Add the finely chopped onion and minced garlic, sautéing until soft and translucent, about 3 minutes.

Add the ground beef to the pan, breaking it into smaller pieces with a wooden spoon. Cook until the beef is browned and cooked through, about 7-8 minutes.

Stir in the chopped green olives, and season with salt and pepper to taste. Remove from heat and set aside to cool slightly.

After the dough has chilled, roll it out on a floured surface to about 3mm thick.

Cut the dough into rectangles about 10x15cm in size.

Place a tablespoon of the filling on one side of each rectangle, leaving space around the edges to seal.

Fold over the dough to enclose the filling, pressing the edges with a fork to seal.

Step 12

In a deep pan, heat vegetable oil over medium-high heat until it reaches 180°C (350°F).

Carefully lower the pastels into the hot oil, frying 2-3 at a time, for about 2-3 minutes per side, until golden brown and crispy.

Step 14

Remove the pastels with a slotted spoon and drain on paper towels.

Step 15

Serve the gluten-free pastels warm as a delightful savory snack or appetizer.
