Ingredients

  • 12 ounces Gluten-free pasta
  • 2 tablespoons Olive oil
  • 4 links Gluten-free Italian sausage
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic, minced
  • 1 large Red bell pepper, diced
  • 28 ounces Crushed tomatoes
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Fresh parsley, chopped
  • 0.5 cup Parmesan cheese, grated (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.

Step 2

While the pasta is cooking, heat olive oil in a large skillet over medium heat.

Step 3

Remove the casing from the Italian sausage and crumble it into the skillet. Cook, breaking up the meat with a wooden spoon, until browned and cooked through, about 5 minutes. Remove the sausage from the skillet and set aside.

In the same skillet, add the diced onion and sauté for 3-4 minutes until softened.

Add the minced garlic and diced red bell pepper to the skillet. Sauté for another 2-3 minutes until the pepper is tender.

Stir in the crushed tomatoes, dried oregano, dried basil, salt, and black pepper. Bring the mixture to a simmer.
