Ingredients

  • 12 oz gluten-free pasta
  • 1 lb boneless, skinless chicken breast
  • 3 cups broccoli florets
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 cup chicken broth
  • 2 tbsp lemon juice
  • 1 cup Parmesan cheese, grated
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil and cook the gluten-free pasta according to the package instructions until al dente. Drain and set aside.

Step 2

While the pasta is cooking, cut the chicken breast into bite-sized pieces and season with salt and black pepper.

Step 3

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken pieces and cook for about 6-8 minutes, stirring occasionally, until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and sauté for 1 minute until fragrant. Be careful not to burn the garlic.
