  • 15 ounces, drained and rinsed canned red kidney beans
  • 6 cups gluten-free vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 bay leaf
  • 1 cup gluten-free pasta
  • 2 cups fresh spinach
  • 0.25 cup, chopped fresh parsley
  • 0.5 cup, grated Parmesan cheese (optional)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, celery, and carrots to the pot. Sauté for about 5-7 minutes until the vegetables are soft.

Stir in the minced garlic and cook for an additional 1 minute until fragrant.
