Ingredients

  • 1 cup Gluten-free all-purpose flour
  • 0.25 cup Tapioca starch
  • 0.5 teaspoon Xanthan gum
  • 0.25 teaspoon Salt
  • 1.5 cups Whole milk
  • 2 large Eggs
  • 1 tablespoon Butter
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Butter or oil (for cooking)

Directions

Step 1

In a large mixing bowl, combine the gluten-free flour, tapioca starch, xanthan gum, and salt. Whisk until evenly mixed.

Step 2

In a separate bowl, beat the eggs and then whisk in the milk and vanilla extract.

Step 3

Gradually pour the wet mixture into the dry ingredients while whisking continuously until a smooth batter forms. Allow the batter to rest for 10 minutes.

Step 4

Heat a non-stick skillet over medium heat and add about 1/2 teaspoon of butter or oil, swirling it around to coat the surface evenly.

Step 5

Pour about 1/4 cup of the batter into the skillet and quickly swirl the pan to spread the batter into a thin, even layer.

Step 6

Cook the pannenkoek for about 2-3 minutes, or until the edges start to lift and the bottom is golden brown.

Step 7

Carefully flip the pannenkoek using a spatula and cook for an additional 1-2 minutes on the other side until golden.

Step 8

Transfer the cooked pannenkoek to a plate and cover to keep warm. Repeat with the remaining batter, adding more butter or oil as needed.

Step 9

Serve warm with your preferred toppings such as fresh fruit, syrup, cheese, or ham.
