Ingredients

  • 1 cup Rice flour
  • 0.5 cup Tapioca flour
  • 0.5 teaspoon Salt
  • 0.75 cup Warm water
  • 2 cups Oil for frying
  • 2 Boiled potatoes
  • 0.5 cup Boiled chickpeas
  • 0.25 cup Chopped red onion
  • 2 tablespoons Chopped cilantro
  • 1 teaspoon Chaat masala
  • 2 tablespoons Tamarind paste
  • 1 teaspoon Green chili paste
  • 0.5 cup Mint leaves
  • 1 teaspoon Cumin powder
  • 0.5 teaspoon Black salt
  • 1 cup Cold water

Directions

Step 1

In a bowl, mix rice flour, tapioca flour, and 0.5 teaspoon salt. Gradually add warm water and knead to form a smooth dough.

Step 2

Divide dough into small balls (about 1-inch diameter). Roll each ball into thin discs, approximately 2 inches in diameter.

Step 3

Heat oil in a deep pan over medium-high heat. Fry the discs until they puff up and become golden and crisp. Remove and drain on paper towels.

Step 4

For filling, mash boiled potatoes and mix with boiled chickpeas, chopped red onion, cilantro, and chaat masala.

Step 5

To prepare the pani (spicy water), blend tamarind paste, green chili paste, mint leaves, cumin powder, black salt, and cold water. Adjust salt to taste.

Step 6

Poke a small hole into each puri. Fill with potato-chickpea mixture and dip into the spicy water before eating.
