Ingredients

  • 1 loaf Gluten-free baguette or bread
  • 3 medium Ripe tomatoes
  • 2 Garlic cloves
  • 4 tablespoons Extra virgin olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Freshly ground black pepper
  • 6 leaves Fresh basil leaves (optional)

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Slice the gluten-free baguette or bread into 1/2-inch thick slices. If the loaf is very large, cut the slices in half to make them more manageable.

Step 3

Place the bread slices on a baking sheet and drizzle or brush each side lightly with 2 tablespoons of the extra virgin olive oil.

Step 4

Toast the bread in the oven for 5 minutes, or until golden and crispy. Remove from the oven and set aside to cool slightly.
