Ingredients

  • 120 g Gluten-free all-purpose flour
  • 300 ml Milk
  • 3 large Eggs
  • 20 g Granulated sugar
  • 0.25 tsp Salt
  • 2 tbsp Butter
  • 250 g Quark cheese (Tvaroh)
  • 2 tbsp Powdered sugar
  • 0.5 tsp Vanilla extract
  • 1 tsp Lemon zest

Directions

Step 1

In a large mixing bowl, whisk together the gluten-free all-purpose flour, milk, eggs, granulated sugar, and salt until you have a smooth batter. Let the batter rest for 10 minutes to allow the flour to absorb the liquid.

While the batter is resting, prepare the filling by mixing quark cheese, powdered sugar, vanilla extract, and lemon zest in a bowl until smooth and set aside.

Heat a non-stick frying pan over medium heat and lightly grease with a small amount of butter. Pour a ladleful of batter into the pan, swirling it around to cover the bottom evenly.
