Ingredients

  • 500 grams ground chicken or pork
  • 2 tablespoons vegetable oil
  • 4 garlic cloves
  • 3 bird's eye chilies
  • 1 medium yellow onion
  • 1 medium red bell pepper
  • 2 tablespoons gluten-free soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon palm sugar or brown sugar
  • 1 cup Thai basil leaves
  • 2 cups Jasmine rice
  • 4 cups water

Directions

Step 1

Start by washing the Jasmine rice under cold water until the water runs clear. Add 2 cups of Jasmine rice to a rice cooker with 4 cups of water. Cook according to the rice cooker's settings until the rice is soft and fluffy.

Step 2

While the rice cooks, prepare the ingredients. Mince the garlic cloves and finely chop the bird's eye chilies. Thinly slice the yellow onion and red bell pepper.

Step 3

In a small bowl, mix together the gluten-free soy sauce, fish sauce, oyster sauce, and palm sugar (or brown sugar) until the sugar is fully dissolved. Set aside.

Step 4

Heat vegetable oil in a large pan or wok over medium-high heat. Add minced garlic and chopped chilies, and stir-fry for about 30 seconds until fragrant.

Step 5

Add ground meat to the pan. Break it up with a spatula and cook until it starts to brown, about 5 minutes.

Step 6

Add the sliced onion and red bell pepper to the pan and continue to stir-fry for another 3-4 minutes until the vegetables start to soften.

Step 7

Pour the sauce mixture over the meat and vegetables. Stir well to combine evenly and let it cook for an additional 2-3 minutes until the flavors meld together.

Step 8

Turn off the heat and add the Thai basil leaves to the stir-fry, stirring until they wilt slightly from the residual heat.

Step 9

Serve the Gluten-Free Pad Krapow hot with a side of steamed Jasmine rice.
