Ingredients

  • 3 medium-sized Onions
  • 150 grams Chickpea flour (besan)
  • 50 grams Rice flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Coriander seeds
  • 1 teaspoon Ground turmeric
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 2 tablespoons Fresh cilantro
  • 150 milliliters Water
  • 500 milliliters Vegetable oil

Directions

Step 1

Peel the onions and slice them thinly. Separate the slices into rings and set aside.

Step 2

In a large mixing bowl, combine the chickpea flour, rice flour, baking powder, cumin seeds, coriander seeds, ground turmeric, chili powder, and salt.

Step 3

Finely chop the fresh cilantro and add it to the dry ingredients.

Step 4

Gradually add water to the dry mixture, stirring continuously, until you form a smooth and thick batter. Ensure there are no lumps.

Step 5

Heat the vegetable oil in a deep frying pan or wok over medium heat until hot but not smoking.

Step 6

Dip the onion rings into the batter, ensuring each piece is well-coated.

Step 7

Carefully drop a few battered onion rings into the hot oil. Fry in batches to avoid overcrowding. Cook each batch for about 3-4 minutes or until golden brown and crispy.

Step 8

Remove the bhajis with a slotted spoon and drain on paper towels.

Step 9

Repeat with the remaining onion rings and batter.

Step 10

Serve the onion bhajis hot with your choice of chutney or dipping sauce.
