Ingredients

  • 250 g gluten-free spirali pasta
  • 150 g cherry tomatoes
  • 1 medium cucumber
  • 1 medium red bell pepper
  • 1 small red onion
  • 2 tbsp parsley
  • 1 tbsp chives
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Bring a large pot of salted water to a boil and cook the gluten-free spirali pasta according to the package instructions until al dente. Drain the pasta and rinse with cold water to stop the cooking process. Set aside to cool.

Step 2

While the pasta is cooking, prepare the vegetables. Cut the cherry tomatoes in half, dice the cucumber, deseed and dice the red bell pepper, and finely chop the red onion.

Chop the parsley and chives finely. Set aside.

Step 4

In a large mixing bowl, combine the cooked and cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, parsley, and chives.

In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, salt, and pepper until well combined to make the dressing.
