Ingredients

  • 200 grams gluten-free all-purpose flour
  • 50 grams tapioca starch
  • 0.5 teaspoons xanthan gum
  • 1 teaspoons salt
  • 3 large eggs
  • 125 milliliters milk
  • 2 tablespoons butter

Directions

Step 1

In a large mixing bowl, combine the gluten-free all-purpose flour, tapioca starch, xanthan gum, and salt. Mix well to combine the dry ingredients.

Step 2

In a separate bowl, whisk together the eggs and milk until well blended.

Step 3

Create a well in the center of the dry mixture and pour in the egg and milk mixture. Stir the wet and dry ingredients together until a sticky dough forms. If the dough is too thick, add an extra tablespoon of milk, one at a time, until the right consistency is reached.

Step 4

Bring a large pot of salted water to a boil.

Step 5

Once the water is boiling, place a nokedli maker (or large-holed cheese grater or colander) over the pot. Add portions of the dough into the maker and press through so the dumplings drop into the boiling water.

Step 6

Cook the dumplings in the boiling water for about 2-3 minutes or until they rise to the surface. Use a slotted spoon to remove them from the water and transfer them to a large bowl.

Step 7

Repeat the process with the remaining dough until all nokedli are cooked.

Step 8

In a pan, melt the butter over medium heat, then add the cooked nokedli. Sauté for a minute or two until they are lightly coated with butter.

Step 9

Serve the gluten-free nokedli warm as a side dish or with your favorite gluten-free sauce.
