  • 200 grams Gluten-free all-purpose flour
  • 1 teaspoon Xanthan gum
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 3 tablespoons Olive oil
  • 150 milliliters Warm water
  • 200 grams Mushrooms (such as cremini or button), sliced
  • 2 cloves Garlic, minced
  • 1 tablespoon Fresh thyme, chopped
  • 100 grams Mozzarella cheese, shredded
  • 50 grams Parmesan cheese, grated
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Preheat the oven to 200°C (390°F) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, combine the gluten-free all-purpose flour, xanthan gum, baking powder, and salt. Stir to combine the dry ingredients.

Add 2 tablespoons of olive oil and most of the warm water to the dry ingredients, reserving a little water to adjust consistency if needed. Mix until a dough forms; it should be slightly sticky but manageable.
