Ingredients

  • 4 slices Gluten-free multigrain bread
  • 2 tablespoons Olive oil
  • 2 cloves Garlic cloves, minced
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Crushed red pepper flakes
  • 2 tablespoons Sunflower seeds
  • 2 tablespoons Pumpkin seeds
  • 1 tablespoon Chia seeds
  • 1 tablespoon Flaxseeds
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Lemon zest

Directions

Step 1

In a small bowl, combine olive oil, minced garlic, salt, and crushed red pepper flakes. Stir well to create a seasoned oil mixture.

Step 2

Preheat your grill or a large non-stick skillet over medium heat.

Step 3

Brush one side of each slice of gluten-free multigrain bread with the seasoned oil mixture.

Step 4

In a separate dry skillet, toast the sunflower seeds, pumpkin seeds, chia seeds, and flaxseeds over medium heat, stirring frequently, until they are golden brown and fragrant. This should take about 3-4 minutes.

Step 5

Remove the seed mixture from the skillet and set aside.

Step 6

Place the bread slices, oiled side down, onto the grill or skillet, and toast for 3-4 minutes until the bread is golden brown on the underside.

Step 7

Flip each slice and cook for another 3-4 minutes until both sides are crisp and golden.

Step 8

Remove the toasted bread from the heat and immediately sprinkle the toasted seed mixture over the hot bread slices.

Step 9

Garnish with fresh chopped parsley and a sprinkle of lemon zest for a refreshing touch.

Step 10

Serve warm as a hearty, nutritious start to your day or a fulfilling snack.
