  • 1 cup Brown sugar
  • 2 cups Grated carrot
  • 1 cup Grated apple
  • 0.5 cup Raisins
  • 0.5 cup Chopped walnuts
  • 0.5 cup Unsweetened shredded coconut (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners, or lightly grease it.

Step 2

In a large bowl, whisk together the gluten-free all-purpose flour, xanthan gum, baking soda, cinnamon, and salt.

Step 3

In a separate medium bowl, whisk the eggs, then add the vegetable oil, vanilla extract, and brown sugar. Mix until well combined.
