Ingredients

  • 150 g Poppy seeds
  • 200 ml Whole milk
  • 100 g Butter
  • 150 g Granulated sugar
  • 3 large Eggs
  • 1 teaspoon Vanilla extract
  • 150 g Almond flour
  • 100 g Gluten-free all-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 tablespoon Lemon zest
  • 2 tablespoons Powdered sugar

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease and line a 9-inch (23 cm) round cake pan with parchment paper.

Step 2

In a small saucepan, combine the poppy seeds and milk. Heat over medium heat until hot but not boiling. Let it simmer for about 5 minutes, then remove from heat and let cool for 10 minutes.

Step 3

In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy.

Step 4

Add the eggs one at a time to the butter mixture, beating well after each addition. Mix in the vanilla extract.

Step 5

In another bowl, whisk together the almond flour, gluten-free all-purpose flour, baking powder, and salt.

Step 6

Fold the dry ingredients into the butter and sugar mixture until just combined.

Step 7

Stir in the cooled poppy seed mixture and lemon zest. Mix until the batter is smooth.

Step 8

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Step 9

Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Step 10

Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Step 11

Before serving, dust the top with powdered sugar for a decorative finish. Slice and enjoy!
