Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
In a large bowl, combine the ground pork, gluten-free breadcrumbs, egg, chopped parsley, thyme, garlic powder, onion powder, salt, and black pepper. Mix until all ingredients are well incorporated.
In another bowl, place the gluten-free flour. Add the cold butter cubes into the flour, rubbing the mixture between your fingertips until it resembles coarse breadcrumbs.
