Ingredients

  • 1 package gluten-free pie crusts
  • 6 eggs
  • 1 cup milk
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup spinach, chopped
  • 0.5 cup mushrooms, diced
  • 1 tablespoon olive oil
  • 0.5 onion, diced

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Roll out the gluten-free pie crusts to slightly thin them out and cut them into circles using a round cookie cutter or a glass that fits into a muffin tin.

Step 3

Gently press the circles into a greased mini muffin tin to form the quiche crusts.

Step 4

In a skillet over medium heat, warm olive oil and add the diced onions. Sauté for 3-4 minutes until translucent.

Add the chopped mushrooms and spinach to the skillet and cook for another 3 minutes until the spinach is wilted. Remove from heat.
