Ingredients

  • 2 cups Gluten-free all-purpose flour
  • 1 teaspoon Xanthan gum
  • 1 teaspoon Salt
  • 2 tablespoons Olive oil
  • 0.75 cups Warm water
  • 1 large Onion, finely chopped
  • 1 medium Green chili, finely chopped
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Mustard seeds
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Red chili powder
  • 0.25 teaspoon Turmeric powder
  • 0.5 teaspoon Garam masala
  • 2 tablespoons Fresh cilantro, chopped
  • 1 tablespoon Lemon juice
  • 2 cups Cooking oil (for frying)

Directions

Step 1

In a mixing bowl, combine gluten-free all-purpose flour, xanthan gum, and 0.5 teaspoon salt.

Step 2

Add olive oil to the flour mixture and mix until crumbly.

Step 3

Gradually add warm water and knead the mixture into a smooth dough. Cover with a damp cloth and let it rest for 15 minutes.

Step 4

For the stuffing, heat 1 tablespoon olive oil in a pan over medium heat.

Add cumin seeds and mustard seeds. Once they start to splutter, add the chopped onions and green chili.

Step 6

Cook the onions until translucent, then add coriander powder, red chili powder, turmeric powder, and 0.5 teaspoon salt.

Stir well and cook for an additional 2 minutes. Remove from heat and add garam masala, fresh cilantro, and lemon juice. Mix well and let it cool.

Divide the dough into 20 small balls. Roll each ball into a small circle (about 4 inches in diameter).

Cut each circle in half to get two semi-circles.

Take one semi-circle and form a cone by bringing the ends together, overlapping slightly, and sealing with a drop of water.

Fill the cone with 1-2 teaspoons of the onion filling and seal the edges tightly with a drop of water.

Repeat with the remaining dough and filling.

Step 13

In a deep pan, heat cooking oil over medium heat. Test the oil by dropping a small piece of dough; it should float up gradually.

Fry the samosas in batches until golden brown and crispy, about 3-4 minutes per batch.

Step 15

Drain the samosas on paper towels to remove excess oil and serve hot with your favorite chutney or sauce.
