Ingredients

  • 150 grams Gluten-free all-purpose flour
  • 100 grams Unsalted butter
  • 50 grams Caster sugar
  • 0.25 teaspoon Salt
  • 400 grams Condensed milk
  • 100 grams Light brown sugar
  • 3 tablespoons Golden syrup
  • 100 grams Additional unsalted butter for caramel
  • 200 grams Dark chocolate
  • 1 tablespoon Coconut oil

Directions

Step 1

Preheat your oven to 160°C (320°F) and line an 8x8 inch square baking tin with parchment paper.

Step 2

In a medium bowl, mix 150g gluten-free all-purpose flour, 50g caster sugar, and 0.25 teaspoon salt.

Step 3

Add 100g unsalted butter (softened) and rub it into the dry ingredients using your fingers until you have a crumbly dough.

Step 4

Press the dough into the prepared baking tin, flattening it with the back of a spoon for an even base.

Step 5

Bake the shortbread in the preheated oven for 20 minutes or until lightly golden. Set aside to cool completely.

In a medium saucepan, combine 100g unsalted butter, 100g light brown sugar, 400g condensed milk, and 3 tablespoons golden syrup.
