Ingredients

  • 2 cups Gluten-free flour mix
  • 1 cup Almond flour
  • 1 cup Fine semolina (gluten-free)
  • 1 cup Unsalted butter
  • 0.25 cup Milk
  • 2 tablespoons Orange blossom water
  • 2 tablespoons Granulated sugar
  • 1 cup Crushed dates
  • 0.5 cup Chopped walnuts
  • 1 teaspoon Ground cinnamon
  • 0.25 cup Powdered sugar

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, mix the gluten-free flour mix, almond flour, and fine semolina together.

Step 3

Melt the unsalted butter and pour it into the flour mixture. Mix well to form a crumbly dough.

Step 4

Add the milk, orange blossom water, and granulated sugar into the dough. Knead gently until the mixture comes together into a smooth dough.

Step 5

In a separate bowl, combine the crushed dates, chopped walnuts, and ground cinnamon to form the filling.

Step 6

Take a small piece of dough, about the size of a walnut, and roll it into a ball. Flatten it slightly in your palm to form a cup.

Step 7

Place about a teaspoon of the date and walnut filling in the center of the dough. Gently close the dough around the filling and seal it, forming a smooth ball.

Step 8

Use a maamoul mold to shape the dough ball if desired, or simply shape with your hands into small, round biscuits.

Step 9

Place the shaped dough on the prepared baking sheet. Repeat with the remaining dough and filling.

Step 10

Bake in the preheated oven for about 18-20 minutes or until the maamoul turns a light golden color.

Step 11

Remove from the oven and let them cool slightly before transferring to a wire rack to cool completely.

Step 12

Once cooled, dust the maamoul with powdered sugar before serving.
