Ingredients

  • 2 cups Almond flour
  • 1 tablespoon Coconut flour
  • 2 tablespoons Psyllium husk powder
  • 1 teaspoon Baking powder
  • 1 teaspoon Xanthan gum
  • 0.5 teaspoon Salt
  • 0.5 cup Butter, cold and cubed
  • 3 tablespoons Cream cheese, softened
  • 3 large Eggs
  • 1 teaspoon Apple cider vinegar
  • 0.5 cup Water
  • 2 tablespoons Butter, melted (for brushing)

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, combine almond flour, coconut flour, psyllium husk powder, baking powder, xanthan gum, and salt.

Step 3

Cut the cold, cubed butter into the flour mixture using a pastry cutter or fork until it resembles coarse crumbs.

Step 4

In a separate bowl, whisk together softened cream cheese, eggs, apple cider vinegar, and water until smooth.

Step 5

Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms. Knead the dough a few times until smooth.

Step 6

Place the dough between two sheets of parchment paper and roll it out into a thin rectangle, approximately 1/4 inch thick.

Step 7

Using a sharp knife or a pizza cutter, cut the rectangle into 8 triangles.

Step 8

Starting from the widest part of each triangle, roll them toward the point to form croissant shapes.

Step 9

Place each croissant on the prepared baking sheet, leaving space between them.

Step 10

Brush the tops of the croissants with melted butter.

Step 11

Bake in the preheated oven for 18-20 minutes, or until golden brown.

Step 12

Allow the croissants to cool slightly on a wire rack before serving.
