Ingredients

  • 2 pounds chicken wings
  • 1 tablespoon gluten-free baking powder
  • 1 teaspoon salt
  • 2 teaspoons black pepper
  • 2 tablespoons lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a large baking sheet with aluminum foil and set a wire rack on top of it.

Step 2

Pat the chicken wings dry with paper towels to remove any excess moisture, which helps the skin become crispy.

Step 3

In a large bowl, combine the gluten-free baking powder and salt. Add the chicken wings and toss them until they are evenly coated.

Step 4

Arrange the wings on the wire rack in a single layer, making sure they do not touch each other for even cooking.

Step 5

Bake in the preheated oven for 20 minutes, then flip the wings over and bake for an additional 25 minutes until they are golden brown and crispy.

Step 6

While the wings are baking, prepare the lemon pepper sauce. In a small bowl, mix together the black pepper, lemon zest, fresh lemon juice, olive oil, garlic powder, and onion powder.

Step 7

Once the wings are cooked, remove them from the oven and let them cool for 5 minutes.

Step 8

Place the cooked wings in a large bowl and pour the lemon pepper sauce over the wings. Toss until the wings are well coated with the sauce.

Step 9

Transfer the wings to a serving platter and garnish with freshly chopped parsley.

Step 10

Serve immediately for the best flavor and texture!
