Ingredients

  • 2 cups Almond flour
  • 0.25 cup Coconut flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Unsweetened almond milk
  • 0.5 cup Vanilla protein powder
  • 2 Eggs
  • 0.25 cup Honey
  • 1 teaspoon Vanilla extract
  • 0.25 cup Coconut oil, melted
  • 2 tablespoons Chia seeds
  • 0.5 cup Berries (optional, for filling or topping)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine almond flour, coconut flour, baking powder, and salt. Stir until evenly mixed.

Step 3

In another bowl, whisk together the almond milk and protein powder until smooth.

Step 4

Add eggs, honey, vanilla extract, and melted coconut oil to the protein powder mixture. Whisk until well combined.

Step 5

Gradually add the wet ingredients to the dry ingredients, stirring gently until a pliable dough forms.

Step 6

Fold in the chia seeds gently into the dough to maintain texture.

Step 7

If desired, fold in a portion of the berries to the dough or save them for topping.

Step 8

Divide the dough into 8 equal portions. Roll each portion into a ball and slightly flatten on the prepared baking sheet.

Step 9

Optionally, create a small indentation in the center of each pastry with your thumb or a spoon and fill with additional berries.

Step 10

Bake in the preheated oven for about 20-25 minutes, or until the pastries are golden and firm to the touch.

Step 11

Remove from oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Step 12

Serve warm or store in an airtight container for up to 3 days. Enjoy your nutritious, gluten-free pastry!
