Ingredients

  • 500 g Lamb shoulder
  • 60 ml Olive oil
  • 30 ml Lemon juice
  • 3 large Garlic cloves
  • 1 tbsp Dried oregano
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 4 Gluten-free flatbreads
  • 150 g Plain Greek yogurt
  • 1 small Cucumber
  • 1 tbsp Fresh dill
  • 1 small Red onion
  • 2 medium Tomato
  • 1 tbsp Olive oil
  • 1 tsp White vinegar
  • 0.5 tsp Salt
  • 0.25 tsp Pepper

Directions

Step 1

Start by preparing the lamb marinade. In a large bowl, combine 60 ml olive oil, 30 ml lemon juice, 3 minced large garlic cloves, 1 tbsp dried oregano, 1 tsp salt, and 0.5 tsp black pepper.

Step 2

Cut the 500 g lamb shoulder into 2.5 cm (1 inch) cubes and add them to the marinade. Mix well to coat the lamb evenly. Cover and refrigerate for at least 30 minutes or up to 4 hours for more flavor.

While the lamb is marinating, prepare the tzatziki sauce. Grate the small cucumber and strain it to remove excess water. Combine the cucumber with 150 g plain Greek yogurt, 1 tbsp fresh chopped dill, and 0.5 tsp salt in a bowl. Mix well and refrigerate until ready to use.

Next, prepare the vegetable topping. Slice the small red onion thinly and dice the 2 medium tomatoes. In a medium bowl, combine the onions, tomatoes, 1 tbsp olive oil, 1 tsp white vinegar, 0.5 tsp salt, and 0.25 tsp pepper. Set aside.

Once marinated, thread the lamb pieces onto skewers. Preheat a grill or grill pan over medium-high heat.
