Ingredients

  • 250 grams Gluten-free all-purpose flour
  • 0.5 teaspoon Xanthan gum
  • 1 teaspoon Salt
  • 1 teaspoon Baking powder
  • 200 milliliters Warm water
  • 2 tablespoons Olive oil
  • 250 grams Ground beef or lamb
  • 1 medium Onion, finely chopped
  • 2 tablespoons Tomato paste
  • 1 small Red bell pepper, finely diced
  • 2 pieces Garlic cloves, minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoon Red pepper flakes
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 1 Lemon, cut into wedges

Directions

Step 1

Preheat your oven to 220°C (428°F) and line a baking sheet with parchment paper.

Step 2

In a large bowl, combine gluten-free flour, xanthan gum, salt, and baking powder. Mix well.

Step 3

Add warm water and olive oil to the dry ingredients and mix until a dough forms. Knead the dough for a few minutes until smooth. If the dough is too sticky, add a little more flour.

Step 4

Divide the dough into four equal portions. Roll each portion into a thin round, about 2-3 mm thick, on a lightly floured surface. Place these rounds on the prepared baking sheet.

In another bowl, combine ground meat, chopped onion, tomato paste, red bell pepper, minced garlic, cumin, paprika, red pepper flakes, black pepper, and parsley. Mix thoroughly until all ingredients are well integrated.

Spread an even layer of the meat mixture over each dough round, making sure to cover the surface completely.

Bake in the preheated oven for 15-17 minutes, or until the edges are crispy and the meat topping is cooked through.

Once done, remove from the oven and let it cool slightly.
